The Fallow, Dublin Airport

The Fallow blends casual dining with a premium touch. Located within Terminal 2, the project involved the transformation and expansion of one of the airport’s largest food and beverage destinations into a multi-offer restaurant and bar.

The project integrated a highly advanced commercial kitchen and service strategy designed capable of serving high passenger volumes while maintaining quality, atmosphere and operational performance.

The design drew inspiration from the landscape and greenery of Dublin’s Phoenix Park, creating a bright and open dining environment overlooking the runway. Warm material palettes, layered lighting and carefully integrated furniture systems were combined to establish a more relaxed and contemporary atmosphere.

Acting as Lead Consultant, RYAN+LAMB Architects provided a full suite of architectural, interior design, project management and Design Team services throughout the project lifecycle. Our role encompassed architecture, interior design, BCAR Design and Assigned Certifier duties and PSDP responsibilities, ensuring continuity and coordination from concept development through to completion.
